Chocolate Science is a Freshman Seminar designed to introduce the student to the science of foods and the technology of food manufacturing. Believe it or not, there is a Department that concerns itself exclusively about food -- its safety, its quality, its preservation and its nutrition. The Department of Food Science and Technology offers a major in Food Science which serves as an entry point into a career in the food industry and governmental regulatory agencies. This course will focus on chocolate. Each session will cover an aspect of the composition, business, safety, quality or manufacture of this tempting treat. Sessions will be held every Monday in the Food Science Building or a suitable location in Athens.

Textbook: The Emperors of Chocolate: Inside the Secret World of Hershey & Mars by Joel Glenn Brenner
Attendance: Attendance at the lecture is expected. In cases where attendance is not possible, a written excuse is required and written answers to the questions must be turned in to the instructor.
Reading Assignments and discussion questions will be provided for each session. Read each weekÕs assignment carefully. Come prepared to answer the questions provided and to discuss the implications of the chapter. If the questions are not clear, contact the instructor by email.
Class Project: The class will become a virtual chocolate company in which we will design a chocolate product, its label, package and a marketing campaign. Then we'll manufacture it and share it with our friends.
Grading. This course is offered on a pass/ fail basis. Satisfactory performance is based on attendance and participation in class discussion. You are expected to attend all class sessions and come prepared to enter into the class discussion.
