Description of Research Interests

Applied research on the conversion of agricultural commodities to value-added food and beverage products for the farmers and entrepreneurs of GA is the main focus of my current work. The quality attributes, food safety concerns, shelf stability and legal requirements of these novel products are also addressed.  Previous industrial experience on cheese, yogurt, pasta, granola, chocolate, soft drinks and juice will be leveraged to identify technical solutions for these development projects. Other research interests include the development of critical flavor and/or texture attributes in final products from the careful selection and controlled transformation of raw materials such as fruit, cocoa, soy, dairy or corn smut.
